    I agree, wet it, wrap it, and stick in the cooler for at least an hour...you pulled it and sliced it too soon is all.

    Hi, me too! Looks great. Forget the time and focus on the temp. One thing I do not do is to panic and raise the smoker to. Lave it alone and watch the internals. Enjoy.

    Hi. Normally, I cook a tri tip, brisket, ribs and or chicken. I have not yet smoked turkey or any fish. Yet I want to. I had success last weekend for all who are following. I reached a temp of 254F and I nearly fell over....lol...My ribs were fall off the bone and the tritip was not in existence...
