For all you RAPA scrapple fanatics

What state are you in? I lived in MD for 52 years and Love RAPA scrapple. I have not seen it in Florida. I'll be sure to check Aldis to see if they have it.

    New from Tampa

Welcome from just south of you in Englewood, FL. The trouble with summer here is the daily afternoon storms. I have a master built electric and a Weber kettle. I’m anxious to smoke some but not so much in a downpour.

    Ref; Ice Cream!

I have a cuisinart and a maverick (freeze the canister type). I buy white paper quart containers rom amazon to package my homemade ice cream and sorbet in. Pretty easy to make. Here are a few of my favorite recipes

    Cure issue?

About two to 2.5 inches. I selected these pieces because the fat cap had some decent marbling and most closely resembled belly. At .99/lb I can’t beat it to experiment on.

    Cure issue?

Thanks. Just making sure. I have had some great success with belly and EQ cure. This is. Y first go at buckboard. At $.99/lb I couldn’t pass up the sale and give it a go!

    Cure issue?

I am about 8 days into a buckboard bacon cure (just a basic EQ using diggingdogfarms calculator). I have a couple spots that remain red where the rest has changed color as expected. Are these spots not curing or is this normal?

Anyone ever have Hoffman's sausage located in hagerstown Md??

I grew up in AAco MD but had never heard of this company. I grew up on Parks breakfast sausage. (I’d be happy to find that recipe). Hoffman’s still in business? Maybe they would share the recipe (not every recipe is a secret) Good luck.
