Need ideas to save a very salty smoked beef brisket

Chunk it up and make a beef stew out of it. I do a tomato based stew, and the liquid will use all that salt and create a delicious base. And you can throw in some vegetables that will further dilute the saltiness. But it looks fantastic!

    Smoking (Frozen) Wings

Fastest way to defrost just about any meat, keep it in the sealed package and get it in some room temp water. I was responsible for the Thanksgiving turkey last year. Took a frozen 21lb bird, put it in a pot of water overnight next to the HVAC vent in the kitchen, and it was defrosted...

I ruined, then we rescued some smoked wings.

When in doubt or you destroy a cut of meat, you can always use a soup/stew/chili as a bailout.

    smoked salsa

Smoke the tomatoes cut in half, flat side down on a wire rack with an aluminum pan underneath. It will catch the liquid which you can use for some great flavor in soups, stews, and sauces.

    Bronto beef ribs

Restaurant Depot does carry them. About 10 lb packages. I am smoking the Chuck Short ribs that you listed right now because I grabbed the wrong bag of ribs. They are right next to one another in the fridge....

Shelf Life of Cured & Smoked Turkey Breast?

I'm no expert, but the packaged deli meats that I have seen usually have a date that is about a month or so. I would think that with the vacuum packaging, you should be able to get 2-3 weeks out of it.

    Pulled pork in 14° weather

Got 2 butts, 3 racks of ribs, and will have 2 flanks in my MES shortly. Barely 20 degrees out but the MES is holding 225 no problem

    Smoker been cold to long

Looks great. I’ve got 2 butts and 3 racks of ribs going myself. And it’s barely 20 degrees here! Happy New Year!

    JUST JUDY & I & A 22 LB. TURKEY

I’ve had quite a few clients over the years with hip replacements. The most important part of your long term recovery and ability is the quality of your physical therapist and the effort you put in to your rehab. Best of luck.
