Chunk it up and make a beef stew out of it. I do a tomato based stew, and the liquid will use all that salt and create a delicious base. And you can throw in some vegetables that will further dilute the saltiness. But it looks fantastic!
Fastest way to defrost just about any meat, keep it in the sealed package and get it in some room temp water. I was responsible for the Thanksgiving turkey last year. Took a frozen 21lb bird, put it in a pot of water overnight next to the HVAC vent in the kitchen, and it was defrosted...
Smoke the tomatoes cut in half, flat side down on a wire rack with an aluminum pan underneath. It will catch the liquid which you can use for some great flavor in soups, stews, and sauces.

I'm no expert, but the packaged deli meats that I have seen usually have a date that is about a month or so. I would think that with the vacuum packaging, you should be able to get 2-3 weeks out of it.
