Started smoking sorta accidentally. Purchased a Chargeiller Duo and it came with a SFB. Tried a pork butt out of curiosity and was hooked. Used it for a year or so and decided it was too much work keeping the temp under control. Read a post here about how a redneck would build a UDS. Fire/temp control sounded a whole lot easier than babysitting the COS, so I built one and played around and it experimented with different things, got it so it would hold temp 24 hours with no babysitting. Put a lot of meat through it smoking for work, family, and just for the heck of it.

Retired, moved, and quit for awhile. Getting back into it now.
