    Brisket question...

Been on 4.5 hours and already up to 169. Still no stall. Using a traeger. Did smoke setting for 2 hours then been on 225 setting last 2.5 hours. I am getting nervous it won't stall. I did adjust the probe to make sure it wasn't giving wrong reading. Will it stall in the 170s?

Woke up at 6:30 and fired up the Traeger, all was good by 6:45 so I put the brisket on and fell back asleep. Woke up at 8:30 to the "Ler" error message which means the traeger dropped below 125 degrees. Tried again and had the same issue. Finally about 10:00 and 3.5 hours out of the frig with on...

    Boston Butt internal temp question...

The 2 Boston butts have been on the smoker at right around 220-225 for 2 hours and the internal temp is 120, is that normal? Internal temp seems low for 2 hours, but I am still relatively new to this. Thanks!

Oklahoma Joe offset smoker question...Question on wood/charcoal...

I've only had this smoker a couple of months and have used it a handful of times. I have done ribs, Boston butt and brisket. What I am confused about is whether I am using too much wood throughout the smoke. I start out making a hollow circle in the fire box and then I use the chimney starter...

Did 2-2-1 this weekend with 6 baby back ribs and seems a bit dry not tender.

I did 3 slabs of baby backs for super bowl Sunday. I did them at 225-240 for 3 hours. I sprayed them with half apple cider vinegar/AJ and applied parkay spread butter after hours 1 and 2. After the 3rd hour I put honey, Brown sugar, butter, and chili sauce on the aluminum foil and put the ribs...

I assume you did the jalapeños at 225-250 like the Boston butt? If so, how long did you keep them on? Did you rotate or flip them?
