Doing my biggest smoke today so I can fill up our freezer for the winter.
3 picnic roasts and 1 butt; 10 pounds each.
Trimmed them all down and removed the skin from the picnics. First time doing that and wasn’t too bad. Gave me much more surface area for rub.
Used yellow mustard as a binder...
Thanks man, I’ll follow your wrapping advice for the hour drive to dads.
Any tricks for taking the bird off the smoker without it falling apart?
I smoked a practice spatchcock chicken the other day and it started falling apart when I took it off the grill and moved it inside. It still tasted...
Hey smoking peeps! I'd like to smoke my first turkey for thanksgiving at my Dad's this year. Beyond trying to figure out which method to use (wet brine/dry brine/spatchcock/etc), I'm wondering if I should smoke it the day before and reheat at my dad's or just smoke it the day of and transport...

Plugged it in and had to babysit it, but...

To avoid that stress, I’m not planning on eating the pork tonight. Just cooking it till it done.
Scored a used WSM a couple weeks ago and am finally getting around to my first cook on it. Bought two, 10 pound pork picnic shoulders on sale at the local supermarket. I wanted boston butts, but couldn't find them at any of my local supermarkets. I asked the butchers at the supermarkets and they...
Nice man. Got my signal 4 last week and have my first cook with it tomorrow. Throwing a couple of 10 pound pork shoulders on the WSM. Also my first cook on the WSM, so I'm pretty pumped! Really wanted boston butts but after checking 4 local supermarkets, all I could get was the picnic roast...
I’m looking at it as well. I have an igrill, whose range sucks.
Read and watched a bunch of reviews on the signals. Looks like a good unit from a solid company. Also love the billows fan that you can get as an add on. Looks like a set it and forget it set up, which sounds ideal to me.
