    What pellet did you use? My understanding is Weber pellets are made by the same company as lumberjack.

    I have already sent Weber the pic of my auger, and I removed the finger guard. :) I haven't really had an issue with the feeding of pellets, so I am not going install the new pellet slide unless I have an issue. Id rather have the capacity for the pellets

    being that i LOVE the flat side of the grill grates for burgers, I wouldnt know.....Give it a try......the FLAT side is a game changer.....All over crust on the burger.....I have only used the slotted spatula to clean the valleys on the grates when i use that side :)

    Update....opened the package, smelled like the day I sealed it! Cooked it up, at a few slices and I am still here typing this! I will let you know if things take a turn for the worse! Lol Thank you all!

    Jimmy,  It was dry cured with mortons tenderquick and brown sugar. It has been sealed since it was sliced. The refrigerator has been on and cold the entire time. it was smoked to an IT of about 150. Packs are still vacuum'ed tight.  thanks!

    I know its a long time, it wasnt intentional. As long as salt is my only issue, I will be fine.....soak soak and more soak. I just didn't want the tueky to go bad......I guess I have more fear of poultry.  Thanks Bear! Dave

    So, I was curing 2 turkey breasts to do this and wouND up curing then for almost 3 weeks (circumstances). Will they be ok if I soak them long enough? I he done it with pork belly and loin and never had a problem, just wasn't sure due to it being poultry. Thanks KS in advance!

    yes, its the 30" 2.5. That is most certainly the difference. I actually tried to sit it on a rack, but again, not enough clearance. less than 1.2 inch off from being perfect.....GRRRR

    Oh, I have a 12 inch tube from Todd as well! I like the maze for longer smokes..... Maybe Todd Needs to make a version 2 of the maze to fit the gen 2.5!!!!!!!
