    Insulating the Landman 38" wide

    Is there any issue with that insulation if the smoker is outdoors and semi exposed to the elements (rain & snow)?  Mine is on my deck and has a caver but I still get some moisture inside at times.

    cmayna - Do you have photos of this?  I'd like to see where and how it was done with it being under the burner as it might be the way I want to go.

    Did you put the sausages in a cold water bath immediately after you pulled them for a while?  There was a post here somewhere stepping through sausage smoking that I followed that ended with a water bath.  Ours were really good

    Point vs. Flat

    I slice my point and personally it's better eating than the flat, just like a prime rib if you ask me.

    Brisket up to 170 under 4 hours? What?

    Turned out pretty good, a little dry in e flat but still tender enough, not falling apart tender but great flavor
