    Is there any issue with that insulation if the smoker is outdoors and semi exposed to the elements (rain & snow)?  Mine is on my deck and has a caver but I still get some moisture inside at times.

    Did you put the sausages in a cold water bath immediately after you pulled them for a while?  There was a post here somewhere stepping through sausage smoking that I followed that ended with a water bath.  Ours were really good

    I lowered the smoker down to 225 and the meat probe now dropped 2 degrees, maybe I don't have it in the meat right?

    I'm putting them in a 10" cast iron pan vs the chip pan that tends to get way to hot.would I put more in that I would for normal size chips?
