At the last minute we've decided to smoke a salmon filet for our supper tonight. This will be my first salmon done in the smoker so I have a few questions, if you can help that would be great.

If you don't want an ECB, may I recommend a Meco. They're available in charcoal or electric and imo are a step up from ecb. If you look on line-on you can find them for around $89. WSM is better,but cost 3 times as much.

Hi, My wife and I are throwing a small party June 13. We're having 35 to 40 quest for the party. Too many people for me to smoke for with my little smoker, so we're wondering if there is someone interested in catering this small event. I'm thinking ribs and chicken. We will furnish the sides...
Looks fantastic...is that like a beef chuck roast? My wife always conplains her roast done in the oven during the winter months are dry. Now that nice weather is back maybe we should put one in the smoker.
