16lb Turkey in MES 30 thoughts..

Thanks for the responses.  So after talking with the wife, we might do a 12lb turkey and a ham (wont smoke that).  So with a 12lber, maxing my MES at 275 should keep me safe and work fine?

16lb Turkey in MES 30 thoughts..

Thanks for taking a moment to read my thread. I am looking for some help on my first turkey smoke in my MES 30. I have relied on you guys in the past for brisket and other meats and have had great success. However, I seem to always get nervous when I am hosting family/friends and haven't smoked...

Pork Butt - Success with questions...

Thanks for the responses.  I should have clarified that this was my 3rd smoke ever.  My first one was a Brisket that was closer to 1hr/lb and my last one before this Butt was Game Hens which were a little over 1hr/lb.  So this was my first pork in general.  I was prepared to towel if it got done...

Good point on cutting them in half!!  I find myself searching for as much bark as I can when getting some of it out of my container.

Pork Butt - Success with questions...

First Smoke, First Brisket = Success

Well I had quite the enjoyable weekend.  I spent last week patiently waiting for my smoker (MES 30 Old gen) to arrive.  Thursday night I assembled, Friday night I seasoned, and Saturday I smoked a brisket for the in-laws.  My smoking experience below: Prior to the smoker arriving, I had ordered...

    Quick Brisket Question regarding Flats

Thanks for the quick reply.  I will plan on going with the best one he picks out for me then!  Was going to get the meat out of the refrigerator around 7am, get the rub on about 7:45 as the smoker heats up and serving around 6pm.  I was hoping between 8-10hr duration, but I might try to get on...

    Quick Brisket Question regarding Flats

Tomorrow I am smoking my first brisket all day.  However, I went to one of our better meat markets and they only had one flat left (extremely lean) and a truck coming with a number of flats.  I asked about getting a packer cut and they can do that for sure, just not by tomorrow.  The in-laws are...
