I am smoking an 8lb brisket tomorrow, and this is only my second attempt at brisket, and this is larger than I did last time.

Received wood chunks today. Took about a week from order (shipped to Ontario).
Haven't tried the wood yet, but sizes look good. Probably approx 35 pieces per box.

Yes, I am planning some of the other mods suggested on the forums. I am definitely going to pick up the recommended dual probe Maverick thermometer for more accurate temps.
The sand suggestion is for adding thermal mass, but you have a point that it may be less necessary...
