    New Oklahoma Joe Hightland

    My cousin and I did our first whole hog for a family reunion,  got just a few pics but it turned out great and everyone seemed to love it.  We are now trying to find something different to do for next year.

    For those who use the foil method, when you place the ribs in foil, do you wrap it tight or leave it open.  Thanks

    First time smoking salmon

    Will attempt salmon for the first time this weekend.  Is it best to cut the salmon or can it be left in larger pieces?  Thanks.

    Just starting smoking a little last year and am doing more this year.  I have a Char Griller with a side box, but have plans to make my own personalized smoker.  Experimenting with all different rubs and meat.  So far, nor bad.  I have gotten good reviews from family.  Wondering if anyone out...
