    How did you come up with your screen name?

    About 6 years ago, my oldest son moved to New Orleans. In visiting multiple times, I fell in love with the place. So much so that I even have a New Orleans tattoo, with a fleur de lis and a crawfish. So I like to use the Cajun spelling of my name - jimbeaux.

    Hello all - Got a Cajun Injector smoker for Christmas. Can't wait to try it out. Ice and snow here, so it's going to be a little while. Also got Jeff's book, so I should be ready to go. I think the first smoke will be wings and ABT'S.
