Thank you for the info... I'll be making spare ribs so I'm thinking 6-7 hours is probably to long. I'll plan for 5-6 hours with time available for finishing them if not tender.

Thanks, I was planning to use 3-2-1 for the ribs... Yes I plan to run them at 225 so after the first 3 hours I'll maybe use foil for only 1 hour then spritz them for the last hour.

Waiting for it to arrive, on a Fed Ex truck. For years I've been a charcoal smoker and still have them. Just getting older now and need a start and forget unit. I've heard many good stories about the unit and I'm hoping there all true. If you have any good ideas I can use, feel free to let me know.
Just notified it's on the truck from Ohio. Pretty cold here this week but when it arrives, I'll run it through the start up seasoning. There's a good butcher shop west of me so I'll stop and purchase some thick baby-backs for the first good smoke.
Just joined because my newer Smoker is in route by Fed Ex and can't wait for it to get here. Not going to retire my charcoal units but I want to try the Smoke-it Model 3. Always have had trouble with the wind here in Nebraska and try to control the heat, you know what I mean.
