I noticed in your pics that you have bricks at the open end. Is that helping you and are those your tuning plates? I'm looking for ideas on what to use to make mine for next season.
From the sound of things I didn't let my shoulder cook to temp.. I smoke for 10.5 hrs.temo was 170. I put it n the oven at 225 for an hour. Still only got 2 190..205 must be the ideal temp. I'll remember next smoke
