So I used a full 17oz bottle of Tony Chachere's Creoly Style Butter injection on a 13# bird and it was over salted in parts but the flavor was really good.
How much do you use on your birds?
I do have a sittin turkey holder that I haven't used it, might be a good idea to use it tomorrow. Just wonder how that would mess with my smoking time.
What time do you smoke your bird at?
I will be smoking a 12-13# turkey on my 14.5 WSM. I usually smoke everything at 225 degrees
what is the ideal temp to smoke a turkey at? 250, 275
and long would it take?
Should I use water or broth in the water pan?
I will be smoking a 12# bird on my 14.5" Weber Smokey Mountain. My question is it better to smoke it on the upper or lower grate?
If I do the upper grate the bird will be very close with the dom of lid, were talking about 1" or so.
Question on the injection recipe? when you say T - is that tablespoon? Also does Apple Juice give it a sweeter flavor? I am trying to avoid a sweet flavor and wanted to know if I substitute chicken stock or broth?
