This is a great idea! A local Bier Haus here makes it, and man is it good! If you do decide to smoke it, and have the time, please post the recipe and some pics. I'd love to know how it turns out. Again, great idea.

I make most of my own (based on books), but I do use Sausage Maker's mix for hot dogs, as I really like it. I also occassionally use their polish sausage mix. It's really good, but I add tons of fresh garlic to it.

Great looking sausages! If you do start selling supplies, be sure to let me know. Also, thanks to everyone for the tips on liver and bellies, etc. I live in DSM and I'll be danged if I can find either at the local stores.
