Just had my first go at a couple of slabs of baby back loin ribs. Got my recipe from Jeff Phillips free section- https://www.smoking-meat.com/december-10-2015-smoked-ribs-with-maple-bbq-glaze.
In it he says he didn't follow the 2-2-1 method for whatever reason, so neither did I.
The problem...
So that’s kind of what I was wondering. Do I need smoke the entire time the food is cooking? IDK why but I just assumed that smoke was needed for the entirety of the cooking process

Just finally was able to assemble my new MES40. It sits level from side-side perspective, but is angled quite far forward. I imagine some forward angling is neccessary for the drip trap to work correctly, but how much is too much?
After reading through the forums I purchased a 2.5 gen MES40 (Thanks @Bearcarver ). Now that leads me to what should my first recipe be? I'm brand new to smoking and looking for something that will be on the simpler side just to get my feet wet.
