I tried Big Casinos recipe using ground turkey earlier this week. Mine fatted out a little bit and I thought it was a bit salty(and I like salty). I used tender quick rather then cure and salt, and think I added too much. On the TQ bag it says to use 1 Tbsp per LB, but I have read elsewhere...- huricanelane
