Kabanosy is basically a Chech/German/Polish pork sausage dtuffed in sheep casing 22mm or so, I add a little extra mustard seed and caraway seed for my taste. I can shoot you my recipe. I'll post here as a picture. All weight is grams per pound. Works for me.

Thanks Al, it's that time of year again. You know, weather getting cooler gets one in the mood to dust off the equipment and process some meat. I need to be thinking about tamales too. I have an idea for hickory smoked tamales, just haven't acted on it yet.
