It has been a long month. My father passed away unexpectedly June 15th. His instructions for his memorial service where a party (movie night, food, games, etc). I ended up cooking a whole hog for work on a Friday, and put 3 pork butts and 3 briskets on for the service on the following day...
Did more cooking on it.. This time for charity (Pink Soles in Motion here in the DFW area). We were at the Harley dealership in Carrollton Friday -> Saturday, cooking up some briskets for charity (and having a cook off).
Our "team" of 5, got 4 places in beans (basically 5->9th), I got 4th...
Just got awake from another cook...
Did 100lbs of brisket for chopped beef sandwiches in Prosper TX yesterday. I need to make sure I have someone there to help me all night. I went from 8am Wednesday -> 4pm Thursday without sleep (work, then cooking then serving then cleanup, then back home)...
I have run mine with and without the guru, and it does seem to help keep stuff steady. You might get spikes after new fuel, but smaller fuel help that.
My dad wants me to change his small reverse flow (was a chargrill offset smoker from Albertsons before I got done modding it) to work with the...
Technically no, but you will run into other issues...
What if your guru goes down or your fans die or you dont have power? Then you will need the air-inlets. I run mine on 2x 25CFM fans, and leave the dampeners closed, but when I had to part out for my boss's system, I was only running on 1...
Something else I noticed is that I should have had the axles further back on the trailer. Instead of it being a "normal utility" trailer, I should have had them put the axles 12-18 inches further back. It would have helped with the balance.
So, here's some food pics from this weekend too.
First, the sausage was for turnin. They gave us just ground pork, and we re-stuffed them and cooked them. We had to cut them into 27 pieces, so there wasn't much to taste test with. Mine was the top right.
Next is some briskets we had...
Okay, so this was a LONG weekend for me. We had 3 smokers, 6 RVs, and a fridge trailer all in our "campsite". I kept the large 2 pits running about 28 hours straight.
So, here is a little picture tour of the smoker from when I got it back to the office on Sunday afternoon.
First, is the...
When it is finished? :) I'll try to get some photos this weekend during the competition / party. Turn-ins are Saturday, and Im not firing up the smoker until maybe Friday night (might be before that, we have a 150lb whole hog in our meat order that's being picked up today).
I will sent in a...
Its been a long week already. We leave in the morning to go setup camp up at Germanfest in Muenster TX.
Mine is the one on the right. It is sitting next to the "company" smoker.
Actually, it turned fine... I still had too much fuel before I was pushing a new stick in. It is holding steady now. Even threw in some baked potatoes (wrapped in foil, with butter, salt, etc in the foil). Fred and Wilma (I named the 2 chickens im cooking) are on their can perches and smoking...
It took it about 90 minutes to warm up this morning (at about 3am). Got the briskets on about 5. It is now 9:20, and they are sitting at a 155 internal temp. Ive been feeding 1 log an hour into it, but when I do, the temp jumps. I have the dampers closed, and the door closed, and the stoker...
Well, I am firing it up tonight for some briskets overnight, and ribs / chicken tomorrow. My internet has been down at the house since Monday evening, so I am posting this from work. The new rack looks slick on the front, and I am getting the cutting board frame done tonight (it is all cut /...
The rack for the wood is sitting in my driveway right now drying from paint... I had to drive the truck to work with the wood in the back. I really want to get it out of here and on the trailer.
At this point, I have 2 checklist items to finish up.
1) 3rd door's drip strip [Found some more...
