Since I posted that inquiry about smoker temps, I realized what I was not doing
and now the temps satay regulated better. Thanks to those who replied to help
me out. I love the smoker and have turned out some really good Q.....

I use hickory and cherry or apple. Using a hardwood with fruit
tree wood will yield some good flavors. I use the hickory & cherry
when doing turkey on the water smoker! Be sure to prepare your
rub to accomodate the two flavors.
Cedar Planks are best for placing salmon or other type fish on top of.
Don't get the plank or shavings to burning as then they would release
the "creosote or similar oil" that will foul the flavor. Regular Cedar
Shingle planks work well, but you can use the special marketed ones.
