    It's still froze, wife bought. I was thinking it had to be 2. Its cryo packed and looks seamless, so I'm hoping its 2.

    I'm going to do a 15lb shoulder, I've never done a biggun like that. Any tips on cook time and keeping it from drying out on a long smoke?

    Just used my MES for the first time on some spares. Started with vent half way open. Not much smoke and not as TBS as I would like, read where you can open side feeder for more air. Will try that next time, also have a AMNS I going to try.  No smoke ring and weak smoke flavor. The first 4 hours...
