You can't go wrong with a vinegar finishing sauce. I've tried this one and another that I really like and it is awesome.- gilds30

Thermometer question
Seeking the advice of the Q gurus here. I have an ECB with sfb and need to incorporate new thermometers other than the one that came with it. Water Pan Question CGSP
Glad this question was posed, I was thinking the same thing. I used the water pan every time in my old vertical smoker and was wondering if it was necessary or commonplace. In my first run with the smoker I placed it next to the sfb opening in the cooking chamber.- gilds30
