I Picked up a bunch of St. Louis ribs and Beef spare ribs and am going to rub them with my Jack Daniels Rub and smoke them in my MES40. The spousal unit loves my ribs. Pretty good for only the third time I've used this smoker. I do miss the smoke ring though on my brisket.
I use it on my rib eye's and on my brisket.
I plan on building a fatty with it this coming weekend in preparation for the fourth but who knows.
Decisions, decisions....
I love the Jack Daniels products ..he he. but I have not used this until now.
It starts smooth but it does have a little kick on the back end.

I was a little concerned due to the fact that it seemed like the IT rose quickly. 4 hours to 140 from 46. I will keep an eye on it and pull and wrap on your instructions. I will let you know how it turns out.

For fathers day I am going to smoke a brisket in my MES40 and 3 racks of St. Louis ribs.
The ribs are in the smoker now.
After the ribs I am doing a beautiful packer brisket.
Good morning all.
I started a 14 pound packer on my MES40 at 6:45 this morning. i am using the temp probe and the internal temp just reached 140 degrees at 10:45 am. i am smoking at 240 degrees.
I have heard multiple IT temps to pull and wrap but not sure. what temp do i pull it?
