    so, I went with both acid and fire. the acid sure worked. I hope I never have to do that again though. the gas it produced left a smell in my nose for a whole day.  I gave it a fresh coat of paint. So now all I have left to do is try it out!

    I have a probe thermometer with a timer for when the meat reaches the right temp. but i am lookin for a stick and leave. If you could bring one, that would be great. I was reading that a candy thermometer is used sometimes, so I picked up one of those the other day.

    that was my first Idea after realizing that I screwed up. maybe I can do both the acid and the fire. why not right?

    maybe change out the Fire box to stainless? Considering I usually don't go over 250 with most smokes. the smoking chamber should be ok right?

    I just realized that. the worst part, I just spent a week having him build it. Is there anyway to salvage it?

    the no hood thing is his preference. As For the galvanized, Whats the Problem? What will happen?
