Brand New to smoking!

Thanks for the welcome guys. I have two 12 pound packers in an electric Char-broil. The temperature is jumping from 225-250 and not setting. Should I be worried? Any tips? I'm guessing its not sealed very well.

Brand New to smoking!

Hi my name is Dustin and I am very new to smoking meat. I live in Ohio. I recently for the first time did two small pork loins and chicken wings for my first go around. I am using a Charbroil electric box smoker. Everyone pray for me as I have volunteered for the task of doing a full 14# brisket...
