    It is possible that the probe is faulty. The jumping around is indicative of a bad connection in it.

    The chart includes offset for sea level barometric pressure, which varies. This effects the boiling point at all altitudes, per the linked chart. You need to add or subtract the amount in the final column to the altitude corrected boiling point.

    Masterbuilt smoker trouble

    Both my electric smokers are controlled by PID, even though the original controls can still work. If I were in your shoes, there is no way I would spend any money on replacing the less than optimal original control system when that money is far better spent upgrading to a PID controller.

    They are a solution for single room A/C and heating. A small unit sits generally high on a wall, with an outside unit, connected by plumbing and wiring. They do not replace whole house air conditioning, and several mini-split units would be less efficient in trying to perform that function...

    Grinding spices

    One of the whirling blade coffee grinders works for most things. Usually available at a local thrift store for not much coin. Large quantities of pepper go through a burr coffee grinder, also available at your local thrift store.
