    Avoiding Rubbery Skin

    I just did chicken for the first time last night.  Only did chicken legs.  Prep'd with a dry rub and cooked on smoker at 250F for 1.5hrs last 1/2  hour brought temp up to 300.  Skin was crispy and didn't even need to be grilled. Turned out juicy and frankly the best chicken I have ever cooked...
