    Amateur cookoff ideas

    I have a cook off this Saturday, main entry is ribs, got that covered. They have a freestyle entry that must consist of a protein or seafood, no side dishes. Anyone have any ideas for this?

    Any Louisiana Smokers out there?

    Louisiana here ..... I buy it green from place called bestop in Scott, La. Pretty much everytime I light up the smoker. I like a heavy smoke to mine and usually smoke around 225 until the casing gets crisp.

    so i got me a big chunck of smoked gouda cheese this weekend. I want to make a fatty with it, rite now im thinking thin sliced rib eye, jalapenos, and the gouda. I don't wanna put anything that will over power the cheese. Any ideas ???

    Gonna smoke my first fatties . I made a pizza and another one with red potatoes, cheddar, and mushrooms. I also made some ATB's with cream cheese, cheddar and a Lil smoky. Also got a Boston butt, rubbed it down with grub rub. Here are some pics of before and I will post the after with q- view.

    its an old hospital foood cart, it has little vents in the side, but their not adjustable!!!

    its charcoal ....... not real sure, i have no experience smoking......... my dad used it to make beef jerky and he smoked a few other things ......nothing major though
