I have a BBQ Guru that i use on my UDS and it is the most efficient heat i have seen! I have held 275* for over 20hrs! It is well worth the money. Not to mention once the temp is set, you can get some sleep while your pork or your brisket smokes overnight.
My normal brisket smoke goes as follows:
1: trim fat cap off
2: season with kosher salt, pepper, garlic powder
3: let rest as long as possible i usually cant wait past 4 hours
4: get UDS to 260 using Guru
5: place brisket on rack and leave alone until thickest part of flat reaches 190

For me its more about the cost. I personally love my UDS! I built it cheaper than you could buy one for, and it does a great job for me. I've cooked ribs, brisket, chicken, venison and they were all with great sucess. Good luck on your quest as you will see a wide variety of smokers out there.
