Okay, I love smoked catfish ... I smoked 3 pounds yesterday over pecan (and it was goooood). But the competition was for pulled pork ... and one team was told to put out their fire!!!!! P!$$ed me off right off the bat ... maybe the hippies had the best bark or smoke ring ... but we will never...
No ... leave them whole ... stuff cavity with onion and lemons .... then wrap in bacon ... I don't even brine mine ... WOW, some of the best smoking you'll ever do!!!!

Waiting on the Blues/Canucks game to come on Versus ... so I went out a couple of hours ago and started 10#'s of spare ribs, since I'll be up for quite some time tonight. I have the Amber Bock chilled, and smoking the ribs with apple/hickory mix.
Sunday I'll be smoking 4#'s of thighs, then bath...
Finally got my toddler to eat smoked pork ... salt and blk pepper only on spare ribs, smoked with hickory/oak. He can't get enough.
Now I always smoke an extra rack with just salt/pepper lightly dusted, just for him. ((and he always dip the meat in ketchup))
