what IT do you guys go to for brisket pastrami? I've had a flat curing for a week. Gonna smoke it next weekend. Do I smoke to an IT of 190-200 like if it wasn't cured?
hey smoking218r, I see you're local. I haven't been to Bob's in a while, but am from the area. Food looks great. I just got my MES and will likely be trying something like this soon.
how is Bob's on pricing?
I'm gonna try the MES 40 and AMNPS combo. I will do some mods to my Brinkmann and hopefully will have better luck with the charcoal. If things go well with the coal, I may look for an upgrade over the Brinkmann in the spring.
