I've had the pellet grill overflow with pellets and start a fire right into the hopper. Definitely a scary panic moment as flames were coming outside of the closed lid. Luckily I was able to think clearly and threw baking soda all over the grill. I still have a bunch of stains on the grill from it.
I was also just restricted to Pit boss and Traeger pellets from the home stores until I found a local butcher shop that sells Lumberjacks, definitely the best pellets IMO.
Excellent choice. On the contrary to jac63, I think you'll do just fine without a PID controller once you learn how your grill operates and the actual temp it is at vs what it is set to (in relation to the hot/not so hot side of the grill)
Regarding pellets, I recommend the Pit Boss...
In my opinion go see the Lil Tex Elite in person if you are interested in it, it is extremely small and really looked like a cheaper quality Traeger to me... I thought it was comparable to the PB 440 that I bought but it looks like a peanut compared to Pitboss' smaller models.

Definitely agree! I see a lot of temp swing/fluctuation on the read out as well on the grill, but just for curiosity I bought the inkbird thermometer and it is actually fairly accurate to what the "set" temperature is on the right side of the grill...
Most people said the dial thermometer on...
Unfortunately Lumberjack pellets in my area are about $22/20 lbs, but well worth it with the smoke profile they give off. Would also be open to Pit boss pellets again as those were actually much better than I thought.
Also want to reinforce as well how great of an option a pellet smoker actually is. Produces tender meat, with a good smoke flavour (i've actually found it to be dependent on the type of pellets you get) and is relatively easy to use while still requiring some work to maintain the cook. If it was...
+1 on the Pitboss 440D, I bought it as a starter smoker as well and have no regrets. It works wonderfully and is a great compact size for just cooking for the two of you for most of the time. It's a good start as you mentioned just to get him familiarized with smoking.
The only downside as...
You could even go as simple as burgers or chicken breast on the grill as others have said, just find whatever meat you have in the fridge and throw it on! I just couldn't wait to see how the thing worked.
Ultimately I would suggest some chicken wings... those come out unreal on a pellet grill.
