    Yes, going to make it about 1.5 - 2 hours before and toss it on to get the smoke. Going to make a roux with butter, flour, half and half, and mustard powder and mix in some cream cheese and sharp cheddar/gouda that I'll be shredding.

    The maze lasted for the first basket and then I removed it. I found with the lavalock tuning plate I needed more fuel burning to get to proper temp.     Coming up on hour 14, and we are at 195* ish. Point is probe tender, flat needs a little more time.
