I have a basic Charbroil gas smoker. I have done ribs and 4-5 # butts well. I decided to try my hand at a good 8# butt. It's the biggest cut I've attempted smoking. It fits on the grate but again it's large.
I have a maverick Et733 probe about 4 inches to left of the meat AND an Acurite oven...
Here is the mod. Little pricier than most I've read about. I had to get three sizes of fittings to go with the needle valve and new hose.
Doing a dry run now. It's definitely running cooler. Wood isn't even burning yet.

Electing to try the needle valve first. Got part ordered. Bought 5 fittings to convert everything from 1/8 to 1/4 to pair with the valve.
Thanks. Will probably just throw the valve directly onto the burner. I guess one alternative is to buy one of the universal hoses at Lowes and run that from the burner.
I've run into the same issue with high temps that a lot of people have and want to install the needle valve. I've seen conflicting ways on how to do it.
