Hey guys just got back from panama city beach Florida. caught a shark while there and now a 1/4 of the 65lb fish is on my bullet smoker .never smoked a shark do a lot of butts that are good but will let everyone know how it turns out.here is a pix before it went on and one on the to the cooler...
Here is a pix of my chargriller smoker i redone today.
Used 1x4 rough cedar for the top counter sunk holes to except the old bolts .sanded it and wiped down with canola oil man it made the cedar come out!!
I have done most mods that helps the smoker do a better job. just need a charcoal basket...
On those butts ken i would go 8 to 10 hrs on 250-275 thats what i been cooking mine on . I wrap mine around the 6 hr mark and let it slow cook with the heat dropping to about 200 degrees till i pull them off
And let them set and cool off to pull the pork.

Looks real good here is some pix of Christmas smoking i done quail and pig start to finish cooked on sbs Quail was cooked at 325 for 1 hr. Butt was smoked for 6 hrs at 250 deg.
Man i cannot believe how much help and killer recipes are on this sight. Thanks guys for the welcome look forward to reading more info on how to make me the bbq king of my area!!! Or something like that.
