Great job! Looks like it'll melt in your mouth.
It is truly magic when the meat literally falls apart. You are correct that this forum is responsible for some awesome smoking. You can learn so much from others' experience.
My Sons, 26-24, always brag, "...look at the smoke ring!" then go on to...
I saw them at our Bed Bath and Beyond last fall and decided against them at the time. After stewing about it for a week I went back in and they were gone! So I asked for them at Christmas time and got them from my Sister-in-law and can't do without them.
So I'd look for a B B & B.
Thanks for the kind words.
Just olive oil, salt, and pepper on these. I do have a hybrid of an Emeril rub but the in-laws don't like it spicy. However they do dig the bark. They're like kids under a piñata grabbing at it. I'll have to try wrapping to see the results.
Two beauties I smoked while wallpapering the bathroom.
I think I nailed 'em, if I must say so. Used hickory wood on top of Cowboy lump charcoal. Took 4 1/4 hrs at 215-220 degrees.
I'm new to the website but I've found the reading fascinating. I'm an offset smoker, lump charcoal only from Red Lion PA. Boston Butts are my forte, but any meat hanging on a bone will do. Looking forward to sharing stories and pictures with you.
