    Packer Q-View

We ended up having dinner around 7 and everything was perfect.  The brisket was moist, tender and had excellent flavor. I'm sure the next one will take twice as long and we'll be eating at 3am lol Begging to be sliced... Wish granted... I really need to be quicker with the camera....This...

    Packer Q-View

Ugh - I really hate brisket sometimes. This sucker was done at 10:30 this morning - 12hr cook time. I quickly wrapped in foil and put it into a cooler stuff with towels. We weren't planning on eating until 8 or 9 tonight...... Guess it'll be an early dinner.

    Packer Q-View

What better way to really break in a new smoker than with a 15.4lb packer?  I'm not used to photographing my cooking as I go so I missed the opportunity to take some pre-unwrapping and pre-rub pics.  I was aiming for a 12lb or so brisket but this was the smallest my butcher had available so I...

    MES 40 Thick Yellow Smoke

Oh really? Coulda sworn a thread I was reading had an elbow on a top vented model - I could be wrong though.

    MES 40 Thick Yellow Smoke

Test smoke with a half row of pellets and it was smoking reallly good with the loader out so I put it back in (couple inches out) and cut it down to about what I'd call a medium smoke. It's all the way in now and just about perfect for a light smoke. I'm gonna add an elbow over the vent to...

    MES 40 Thick Yellow Smoke

My AMPNS and pellets came today - so exciting :) I'm gathering from past threads here that the optimal placement in my Gen 2.5 is on the very bottom to the far left of the chip burner with the large, oval split level water pan in its normal spot above it? Top vent wide open, chip tray and...

    MES 40 Thick Yellow Smoke

So far so good tonight. I've got a rack of baby backs and some bone in chicken breasts going using Jeffs dry rub. One little incident of the thick smoke when I first added chips. Added a little at a time since and so far it's staying TBS. Ordered the AMPNS and several 2lb bags tonight. Can't...

    Hello all from Southern Illinois

After wanting a smoker for many years we finally picked one up - well two if you count returning the first one. We found a good deal ($250 plus 35ish shipping) on a MES 30 with legs, cover etc from QVC but discovered after one light sprinkle of rain that the cover was in no way waterproof. It...
