I just replaced my Traeger with a Masterbuilt 800 Gravity Feed. It is amazing! In over 30 years of smoking with anything from an UDS to a kamado to a Traeger and this Masterbuilt is so far and away my favorite. So easy to light, full-blast up to 700 degrees faster than you'd ever believe...
I saw no reason to add sodium nitrate for three pounds that would be eaten in a day. Salt and other seasonings (as listed) were rubbed in 24 hours prior to smoking.
3 Lbs of pre-sliced Top Round
Sea Salt
Black Pepper
Garlic Powder
Cayanne
Finished with a little Bourbon/Brown Sugar seasoning
Pecan Chips
165* for 2.5 Hrs
Ground chicken with some seasonings. I cooked it at around 220 up to about 150 then I turned heat up to 260 at the end to crisp up the bacon until it hit 165.I will decrease amount of ground chicken and increase cheese and dijon mustard on the next one.
