Looks good, bet it tastes good too. I just fell down the cheese smoke hole, and had to look up times since I just fired up the smoker for my first cheese attempt.
The only Fattie that failed me was a spicy turkey sausage. I made 3 of them, and after choking down the first, took awhile to pull the others out of the freezer. It didn't work for me, hopefully others have better luck. I'm sticking with the tried and true pork sausage. Got fixins tonight for 3...

My MES died at 2.5 years, but got a rebirth and is still putting out some amazing smokes at the 3 year mark. It's been terribly cold, but missing my smoked meat. Almost picked up a spiral sliced ham last week, but thought I'd wait for a warm spell. Supposed to warm up this week...
I knew my time would come to do this repair, turned out to be today. Thankfully the Smoking Gods waited till I was up to temp and got close to the amount of thin blue smoke I needed. I wanted more, but I'm glad it didn't ruin my spiral sliced ham & 5lbs of smoked baked beans.

I've been like this for years, 1 1/2 ago had throat surgery to open up the airway and it's helped with some things, still have sleep apnea. But my sense of smell and hearing came back on my left side. Still get stuffy, lots of clear runny junk. Way too many tests last month, good news is...
My grinder does have the ball bearing's, and looks to run smooth. I need to get a can of lube before I crank more than a few turns. I was also thinking of adding a foot switch to make it safer and keeping it off while grabbing more meat. (Sounds bad..) I have some Corian counter top cut offs...
BigRedQ, how's the hands feeling? I won't make ABT's without gloves, again... I'm probably a wimp, but like to be able to feel with hands other than a burning sensation.

I got the same grinder for Christmas, waiting to get a motor before I run some meat through it.
Would like to get a direct drive motor, and go without the pulley setup. Still looking for just the right motor, power, low speed and hopefully cost.
Any suggestions? Once I get it up and running...

Seeing the recent thread on the mini vac sealer, didn't want to hijack the thread. Has anyone seen or used one of these in Person? I have a whole house vac system, and very handy so installation would not be a problem.
