I use Cherry Coke to marinate duck breasts before smoking. Cherry Coke, cherry jam, Dijon mustard, soy sauce, HP sauce and balsamic vinegar. Cover duck breasts and leave overnight in the fridge.
Maybe because he already has a gas BBQ, a straight smoker might be the way to go. I have a Traeger 075 with the optional cold smoker accessory and absolutely love it. There are some pretty good deals on their website this Black Friday Weekend and I'm sure they will be repeated before Christmas...
Some great information here. I just hope that Noboundaries post means that we need a degree in chemical engineering to be really successful at this smoking game. Having said that, I can't believe how well some of my efforts have turned out using just blind luck and common sense.

Ufert, I have better luck with pork butts - generally larger pieces of meat and less expensive. I did two 8-lb butts last week on my Traeger and they were brilliant.

What are you using for a meat thermometer and interior thermometer? The analog thermometer on my Traeger Texas registers at least 30 degrees high when compared to the digital setting thermometer on the pellet hopper or my Maverick ET 732.
