Birch is a softer wood so, itwill burn faster than oak and others. Should be fine for continuous burn, but be careful it may burn fairly hot so, try a test burn first before leaving it unattended.
Welcome, I was going to buy the Duo, but I am kind of a purest and don't like the way gas cookers burn. I guess you can say I am a little skittish of propane all together as I have been near a blow out. They do look like an awesome set up though. Happy smoking
Welcome to the group. I have the very same cooker, about 5 yrs. old and does great. It is now attached to my big rig as a backup. I had one before that one which met its doom in a storm. These are what I learned on through the years. Like I said welcome and good luck with all your cooks.
Here she is, all complete and doing her first catering mission. All went awesome, cooked 30 racks of baby backs to perfection (using Jeff's rub recipe) and the people were running back for more. We also picked up 2 more jobs while on-site. Great day to be a smoker.
