    When mine was doing that I got a new regulator and it fixed it. I also am in the camp of not using the wire wheel on a drill. I did just that when I got mine used from my grandparents that was all rusty. Thing has been the biggest PITA since. I've refinished mine 3 times and it still isn't right!

    I've always heard 175° for dark meat poultry. That'd what I take mine to and they always turn out good. Sometimes they'll creep a little higher than that but with all the fat they've never dried out like a breast would
