    Good ideas. I work in that valley quite a bit. There's a place in Vegas called Allied Charcoal...they have tons of smoking wood of all types.

    Half splits and full logs of hickory, pecan, and apple. Not sure how big the burlap bags are I buy, but they're about waist high and I try to keep 3 on hand at all times. Kind of hoping to build something rustic looking that my wife doesn't hate looking at. Thanks for the reply!

    That's the stuffer I have.  It worked great.  No I didn't soak the casings at all, seemed to work well without doing it.  Good luck and have fun!

    First of all thanks everyone for giving me some tips on my last thread.  This was my first time making sausage, so I used the Hi Mountain pepperoni kit.  I made 2.5 lbs of 80/20 ground beef.  The goods... All measured out And the fun begins All stuffed and going into the fridge to cure...
