    I Tri-tip, because I don’t always want a whole brisket

That sounds like a disappointing lesson to learn, but definitely an important one. I'll be sure to pay more attention to the grain in my tri-tips now too.

Thanks! I'll definitely give that a try, sounds great.

    Offset FB Intake valve.

I have done that before, the only bad side effect that I've seen from it is that it can generate a lot of smoke. But it's not the nice clean smoke that I normally have running through the smoker, it seems thicker and sometimes darker. Maybe it is a big no-no, but I haven't seen any definitive...

    I Tri-tip, because I don’t always want a whole brisket

Thanks Blazer! It sure didn't last long, maybe next time I'll do two and there will be a slice around for me to share with you. What kind of marinade do you normally use? I wouldn't mind giving that a try sometime.

    I Tri-tip, because I don’t always want a whole brisket

Thanks a lot J.P. Under $3/lb?! Man I am jealous of that! I thought I had a got a decent deal, but that would be great. At that price you could experiment all kinds of things. Try bringing the IT up sometime, I'm sure you won't be disappointed.

Hahah... They sure are a little confused, I hadn't noticed that. I was the least fishy tasting seafood I've ever had!

Thanks Doug, I was definitely impressed with the finished product. I'll be doing it again for sure.

    Beef Ribs for Dad...Challenge Accepted!

Those look great! I've never smoking beef ribs, I don't see them very often either. Did you separate them to speed up your cook time or is it just better that way? Either way, I'll have to give that a try for sure.

    I Tri-tip, because I don’t always want a whole brisket

I actually did this a while ago but still wanted to share because it turned out so well. I was at the store looking for something to smoke and saw this beautiful tri-tip, so I had to get it! There are a lot of things that I haven’t tried to smoke but really want to, and this was one of those...

    Doing to cooks today

Wow, those look great! I've never had smoked lamb ribs before, but my mouth is watering thinking about it. Good job!

    Venison Pastrami

That looks great! Hopefully I'll get to give that a try with some caribou this year.

    Another long weekend,another tri tip

Nice looking Tri-tip, and great looking pintail! The family and I went to a kids birthday party this weekend, to another family's home, and they had a pheasant, and several of the different types of ptarmigan on the walls. This was the first time my wife has admitted to me that she thought an...

Pork loin with hickory, trying out one of those smoker boxes

Those look like some pretty nice setups too. I think I would really like being able to check temps from inside, especially when there's snow on the ground. Thanks for the recommendations!

Pork loin with hickory, trying out one of those smoker boxes

Thanks for the kind words Matt. The moisture and texture was fantastic! I did think about brining, but decided to keep this one really simple and just do a rub. Maybe next time I will do a brine. As far as temp probes go, they sure can be picky sometimes. Maybe someday I'll be able to afford a...
