I made some Guanciale earlier this year. It was a bit of a challenge for the aging. I might try this again next year after a light smoking. But not sure how to do this as I think cold smoke is required. Still playing with this.
I wonder is it because of the lower temperatures in the smoker? I know that there seems to be alot of places that say to soak the wood before placing in the BBQ. I know that the unsoaked wood in the smoker box on the BBQ smokes and then ignites burning off.
You did a good job. Maybe in the spring I may try that for my 50+ at church. I was wondering how much each weighed. My smoker could do only three at the most.

I leave my vents completely open. I am getting a new thermometer so that I can watch my temps better. I would open it to check things more frequently, at first.
