Smoking for Two - How do you handle small batches?

There are also things you can smoke for just the two of you that don't take very long...a simple fatty is a great way to learn how to smoke, doesn't take that long, and you don't have to worry about leftovers.

First Time Smoker....SERIOUS Temp Problems. IMMEDIATE Help Needed!

A small hot fire seems to work best in my unit. I start with just a little bit of charcoal and like it was mentioned before, I start closing the intake down as the temp nears what I am wanting. It's a lot easier to catch it on the way up then to let it get to hot and try to dampen it down...

    Smoking multiple meats at once

Chris, In addition to the fruit woods, you can also use pecan. It's a little stronger but seems to work with just about everything without overpowering it. I love pecan and cherry mixed!

    Temperature control

X2 I let mine go over as well and then shut it down to stabilize at the temp I want. Keep using your unit and try different methods until you find what works with yours. I would also recomend keeping a log. I used to think it was going overboard, but once I tried it, I was amazed at how much...

    Bacon wrapped chick cordon blue

Thanks for the compliments. Sorry its taken so long to get back. To answer some questions.....I simply sliced the chicken down one side to form a pocket and then inserted 3 thin slices of deli ham that were folded in half and a slice of swiss cheese in the pocket. I would recommend two slices...

    Bacon wrapped chick cordon blue

This was my first time to smoke chicken cordon blue and the family loved it! I cut a slit in each one, stuffed in some deli ham and Swiss cheese, and wrapped in bacon. Sorry, didn't have the camera during prep.  Smoked at 250 for about 3 hours.  I used a little hickory, but think next time I'll...
