    Turned out pretty good. I still have a lot work to do, but thanks to all the great folks on this forum I think it shouldn’t take long to step up my game! @seaham358 what do you use for your injection? Gonna give that a try next!

    Wrapped in butcher paper shortly after the last post. Just pulled at probe tender after 17hrs. Resting in the cooler for a few hrs. Will be sure to get pics and update after I enjoy it.

    12hrs on 158 IT. Should be wrapping soon. Central TX weather came through as promised and it started raining out of nowhere at 1am. Used the Harry Soo wood chunk underneath to stop pooling on top.

    4hrs in. Running the ZG on low smoke so it should go all night. Smoke tube kept going out after about the first hour and a half. Might have to work on that but added a good amount when it was going. Spritzing with Apple juice hourly(ish) Never tried injection when I did them on the Weber. Guess...

    After a few cooks getting used to the pellets I finally threw on a brisket. 15lbs going low n slow through the night. Base rub of s&p second layer of Weber beef dry rub. Post oak pellets with an extra tube for a bit more smoke.
